Holiday Egg Nog Cheesecake
Makes 1 9-inch cake
1 cup graham cracker crumbs
2 tbsps white sugar
5 tbsps melted butter
4 (8 ounce) bundles cream cheese, softened
1 cup white sugar
3 tbsps all-purpose flour
3/4 cup eggnog
2 tbsps rum or brandy
1 tsp ground nutmeg
1 tsp cinnamon
1 tsp vanilla
1 cup heavy whipping cream
2 tablespoons of granulated sugar
1/2 tsp of vanilla
Pinch of nutmeg
30 minutes COOK 55 minutes READY IN 1 hr 25 mins
Preheat oven to 325 degrees F (165 degrees C).
In a medium bowl combine graham cracker crumbs, 2 tablespoons sugar and butter. Press into the bottom of a 9 inch pan.
Bake in preheated oven for 10 minutes. Put on a cake rack to cool.
Preheat oven to 425 degrees F (220 degrees C).
In a food processor combine cream cheese, 1 cup sugar, flour and eggnog, blend until smooth and creamy. Blend in eggs, rum, nutmeg and cinnamon. Pour mixture into cooled crust.
Bake in preheated oven for 10 minutes.
Reduce heat to 250 and bake for 45 minutes, or till center of cake is firm to the touch. Remove from the oven and right away loosen cake from rim. Let Egg Nog Cheesecake cool totally prior to removing the rim.
